Biscuit production: Someone explain this for me.

Why does the BAKED biscuit contain more fat, energy etc *by weight* than the uncooked dough it's made from? And no - you do not add any grease etc to the baking tray for cooking. I'm sure there is a simple explanation, but I can't get my head around it!

Because you lose some water which is inert mass. For example, put a spoon full of sugar in a cup of water and bake the cup. Say half the water evaporates, you are left with twice the calories per gram of mass.
